Xmas Red Velvet Candy Cane Pancakes with Cream Cheese
A perfect recipe for those who can't imagine Christmas without peppermint candy canes.
Christmas is the perfect time to treat yourself something special, it is your opportunity to eat something really sweet. If you already tied our spekulatius caramel pancakes, how about red velvet pancakes with cream cheese, peppermint candy canes and meringues? All right, let's get this yummy party going!
For the Cream Cheese Frosting:
30g butter
200g cream cheese
150g powdered sugar
One day before making this frosting take the cream cheese and the butter out of the fridge, it is very important that both have room temperature (otherwise you will end up with a lumpy mixture).
Put the butter and the cream cheese in a bowl and mash them with a fork until they are mixed. Now you will need to add powdered sugar through a sifter, little by little. Don't do it without the sifter! And here is how you do it: put 1/5 of the sugar into the sifter that you are holding over the bowl and push the sugar down with a spoon (check picture below for visual help). Stir everything with a whisk. Repeat until you used up all of the sugar. How's the consistency? Do you want the frosting to be a little bit more solid? If yes, add a little bit more sugar OR cream cheese (not both). When finished put the frosting in the fridge for 20 minutes, it will harden up a little more.
For the Red Velvet Pancakes:
250g regular flour
16g + 36g sugar
4g baking soda
4g baking powder
50g melted butter/oil
4 eggs
2 teaspoons of baking cocoa powder
red food coloring
1 big bowl and 2 small bowls

- First take a small bowl and put flour, cocoa powder, 36g of sugar, baking powder and baking soda into it. Mix it and set the bowl aside.
- Next separate the eggs - egg white goes into the big bowl. Egg yolks are going to the second small bowl, where they will be whisked with 16g sugar and melted oil.
- Now back the he big bowl! Whisk the egg whites a little (don't whip them though). Pour the buttermilk into it, stir. Now you can add the food coloring. Depending on what kind of food coloring you are using, you will need a little or a lot, just follow the instructions on the package. Remember, we're going for a very rich red tone here, that is where the name "Red Velvet" comes from. Whisk it well.
- Pour the egg-yolk-butter mix into the big bowl. Mix it.
- Add the dry ingredients little by little into the big bowl. Mix carefully. If the batter is not liquid enough add buttermilk, one tablespoon at a time. If you are not satisfied with the shade of red you can still add some food coloring.
- Put the batter into the fridge for 20 minutes and preheat your well coated pan. Don't use any oil, there is already some in the batter.
- Start flipping the pancakes!
- Are the pancakes ready? Nice! Put layers of the cream cheese frosting between all the pancakes. On the top pancake we also put some meringues and one crushed peppermint candy cane.
- Eat it - no matter if you do it alone, with your friends or at a romantic Christmas evening with someone dear to your heart.
