Spinach Pancakes with Feta Cream Cheese and Homemade Sesame Coconut Sauce

Popeye always ate his spinach from a can, we will work with fresh spinach instead, but he’ll understand. We will also show you how to make a delicious homemade sesame coconut sauce. This recipe is pretty easy and fast so you can go back to saving the day right on time!
For the feta creme cheese:
100g cream cheese
100g feta cheese
2 Tablespoons milk
fresh herbs (parsley for example)
Grab a small bowl and mix all the ingredients. Add your herbs and put it in the fridge til you're done with the rest of the recipe.
For the sesame coconut sauce:
1 medium size bowl
hand blender
200g roasted sesame seeds
3 tablespoons sunflower oil
100ml coconut milk
- To get the best taste out of that sauce start with roasting the sesame seeds (unless you already bought roasted ones, then you can skip the step). Just take a pan and put it on medium heat and fry the seeds - make sure you stir them so they wont get burned. It will take you between 5 and 10 minutes, depending on your stove.
- Take the seeds out of the pan and let them cool down. Blend the seeds together with the sunflower oil. Keep doing it until you get a smooth light brown cream. It already tastes pretty great if you add a little salt and pepper, but we’re not done yet.
- Mix your sesame cream with 100ml coconut milk and blend it again a little. If you end up with a thick creamy result you did well. Not creamy enough? Add more coconut milk. Fill it in a bottle, put it in the fridge and eat within the next 3-5 days if you have more than you need for the pancakes.
For the pancakes:
1 big bowl
2 smaller bowls
hand blender
250g white flour
4g baking powder
4g baking soda
30g + 15g sugar
pinch of salt
4 eggs
50g sunflower oil
50ml buttermilk
about 50g of fresh(!) spinach (won't work with frozen spinach)
- Lets make some spinach pancakes! To get that delicious green into your pancakes start with blending a handful of spinach in the biggest bowl (add a bit of water to get it somewhat liquid).
- Put flour, 30g sugar, baking soda, baking powder and a pinch of salt in a small bowl. Mix it a little and set aside. Separate the eggs: egg white goes into the big bowl with spinach and egg yolk goes into the remaining small bowl.
- Whisk egg white and the spinach until you get a green foamy blend. Add buttermilk, stir and set aside.
- Get the bowl with egg yolk and add 15g of sugar and 50g oil. Now add the egg yolk and butter mixture to the green egg white mix. Stir. Now pour the dry ingredients into the bowl. Whisk gently, just enough to let it all come together.
- Now to the fun part: flipping your pancakes! Put your pan on a preheated stove with a medium heat and no additional oil, it is already in the batter! Let the pancakes sit in the pan for 1-3 minutes until bubbles appear - that's a signal to flip.
- When you're done get put the pancakes where they deserve to be - your favorite plate: spread some feta-cream-cheese between the pancakes and build a nice stack. Put a teaspoon of feta-cream-cheese on top and pour some of that sesame sauce over your stack. If you have any leftover spinach chop it finely and put on top. Enjoy!
